Cerulean is Forefront Fine Dining Group’s modern seafood restaurant in Makati, inspired by the depth and beauty of the Philippine seas—its name drawn from the rich blue hue that reflects the vast oceans and endless horizons that define its cuisine.
Driven by the culinary vision of Michelin-selected Chef Francis Tolentino, Cerulean redefines Filipino seafood through bold, expressive Asian flavors—where the day’s freshest catch is transformed into artful, contemporary cuisine.

PHILIPPINE SEAFOOD, ASIAN FLAVORS.
Cerulean’s menu celebrates the richness of Philippine waters, highlighting the diversity of seafood found across the archipelago. Rooted in Filipino flavors and shaped by the wider Asian culinary landscape, the cuisine draws from the depth of Chinese traditions and the vibrance of Southeast Asia, interpreted through a modern approach to seafood fine dining.
Each dish is composed with precision and imagination, honoring the purity of the sea through flavors that are refined, balanced, and deeply satisfying.

At Cerulean, every detail is intentional—from responsible sourcing to the final flourish. Guests may experience the cuisine through a thoughtfully curated tasting journey or select from our refined a la carte menu, crafted for elegant dining throughout the day.
